Rich in organoleptic properties favorable to any typeof plantation, this area finds its greatest vocation into the tomato growing. A family tradition links CEO Nicola Palo to the history of this land, to the tomato
and its processing. A childhood characterized by the smell of tomato fields owned by his grandfather, a youth dedicated to the passion for the study of agronomy and an innate business verve soon outline the profile of a man who makes his passion his
lifestyle. Palo guiding principle is the research of High Quality Standard in each step of the whole production chain, from the selection of the raw materials to the final stage of the production process, until the product is tested and approved for shipping. A constant checking of the partners enables it to provide the best quality of Italian tomato. Company purpose is offer everyday the flavor of authenticity and freshness of the fruit as just harvested. Company is in its third generation and it is who established his processing plant in the area of Fisciano (SA) next to the highway exit and to University Campus of Salerno. From the cooperation between Palo
Company, Salerno Campus and other three International Universities was born a process named based on a continuous research of an innovation production cycle about the pulsed electric field technology (PEF). Palo Company is the first and the only one to use this innovative system in the tomato processing field. The use of this innovative system allows to achieve food security by killing microbes and keeping food quality and their nutritional value intact. PEF technology keeps unchanged vitamins, antioxidants and pigments allowing easier peeling and a speedy introduction of steam into the peel, reducing the use of water, energy and tomato waste considerably. The use of PEF system increases the presence of lycopene in the tomato juices and purees. This is very important for its well-known benefits on the immune system and for its antioxidant, antiinflammatory and anticancer effects.
