BERGAMOT RISOTTO - L'Italiano Recipe

Due to its particularly acidic and slightly bitter taste, bergamot can hardly be used alone as a fresh fruit.
Its juice is perfect to combine with others for the preparation of excellent juices and fruit juices and its pulp including the peel are perfect for the preparation of various jams.
In reality, the main uses of bergamot go beyond food uses: it is used above all for the production of essential oils extracted from the peel, twigs, leaves and even its flowers.
One of all is the Bergamot of Reggio Calabria, an essential oil used in perfumery that has obtained the Protected Designation of Origin.
The same oil in its purest version is also one of the fundamental components of the Cologne water.


  • 280 gr Roma or Carnaroli rice

  1. In a saucepan, melt a knob of butter over low heat with the  bergamot oil: add the rice and cook for a few minutes, stirring constantly.
  2. Add two tablespoons of bergamot juice and over medium heat let it consume completely: add hot water until the rice is completely covered and cook with the lid on for about ten minutes checking that it does not stick to the bottom.
  3. After the time, taste to check the acidity of the rice and add another spoonful of bergamot juice and a little hot water: continue until you get your favorite cooking point.
  4. Before serving, stir and complete the recipe by combining if you need very little hot water, the second knob of butter, salt, black pepper, parmesan and a little bergamot oil: stir over low heat for two minutes, turn off the heat and let rest with lid about one minute making sure that the risotto remains creamy.
  5. Serve immediately after. (if you like you can add a little more zest and other black pepper at the moment).
